What You Need:
2 lbs. pork spareribs, separated into single ribs
1 (8 oz) can pineapple chunks, including juice
1/4 C soy sauce
1 pkg. pork coating mix
How to Make It:
Set the oven temperature to 350 degrees and allow the oven to heat while preparing the ribs.
Pour the pineapple with the juice into a mixing bowl.
Whisk in the soy sauce until well combined.
Coat the ribs with the sauce, reserving the pineapple chunks.
Place the coating mix into a shallow bowl.
Roll the ribs though the coating mix until completely covered.
Line a baking sheet to the edges with heavy duty aluminum foil.
Lay the coated ribs in a single layer on the sheet.
Top the ribs with the reserved pineapple chunks.
Bake 45 minutes.
You can make these ribs using any type of fruit you like. Try Mandarin oranges, peaches, apricots or even fruit cocktail if you like. Serve the ribs over a bed of wild rice for the perfect Valentine’s dinner.
