What You Need:
1 1/2 T bacon drippings
1/2 onion, chopped
1/2 a head of red cabbage
1 large sweet apple, chopped
1 T water
1/2 t cinnamon
1/4 C light brown sugar, packed
1 T flour
1/2 t salt
1/4 t pepper
How to Make It:
Place the bacon drippings into a skillet and place the skillet over medium heat.
Add the onion and stirring occasionally, cook the onion for 4 minutes or until just beginning to tender.
Shred the cabbage into the skillet.
Continue cooking 3 minutes or until the cabbage is wilted and tender.
Reduce the heat to low and fold in the apples.
Cook 5 minutes being sure to stir often.
In a bowl combine the cinnamon, brown sugar and flour.
Stir the mixture into the skillet with the cabbage.
Sprinkle the salt and pepper over the mixture and stir to combine.
Continue cooking about 5 minutes or until the sauce has thickened to your liking.
If you do not have bacon drippings on hand canola oil will work. Bacon drippings give the cabbage a little extra flavoring.
