Valentine Rice Pilaf

What You Need:

1 T butter
1/4 C sweet onion, chopped
1/4 C sweet red pepper, chopped
1/4 C celery, chopped
1/4 C dried tart cherries, chopped
1/4 C walnuts, chopped
1/2 t thyme
1/2 t marjoram
1/4 t pepper
1 C white rice, cooked

How to Cook It:

Place the butter into a skillet and set the skillet over medium heat.
Allow the butter to melt completely then add the onion, red pepper and celery.
Cook the vegetables, stirring continuously, for 1 minute.
Add the cherries and walnuts.
Stir in the thyme, marjoram and pepper.
Cook the mixture, uncovered, for 10 minutes or until the vegetables are tender being sure to stir often.
Fold in the rice and continue cooking an additional 3 minutes or until the rice is heated through.

Serves: 2

Wild rice can be substituted for the white rice if you like.  You can also substitute pecans for the walnuts or leave them out completely if you prefer.
